Smaken \u00e4r ofta, men l\u00e5ngt ifr\u00e5n alltid, s\u00f6t. Endast honungsbin kan framst\u00e4lla honung och de g\u00f6r detta fr\u00e5n den nektar som de samlar in fr\u00e5n olika blommor. De lagrar nektarn i vaxramar i bikupan, tills\u00e4tter sina egna enzymer, avfuktar nektarn och slutligen t\u00e4cker de den med ett tunt lager av bivax som ett skydd.<\/p>\n\n\n<div class=\"gb-container gb-container-d0c4a21a\"><div class=\"gb-inside-container\">\n\n<h3 class=\"gb-headline gb-headline-9be6b31e gb-headline-text\">Sockerarter i honung<\/h3>\n\n<\/div><\/div>\n\n\n<p>Honung inneh\u00e5ller till stor del fruktos och glukos. Relationen mellan fruktos och glukos avg\u00f6r om honungen kommer att h\u00e5lla sig flytande eller kristallisera \u00f6ver tid. Detta \u00e4r helt naturligt och best\u00e4mt av naturen. Honung fr\u00e5n norra Europa, som Sverige, kommer alltid att kristalliseras \u00e4ven om olika sorter tar olika l\u00e5ng tid. Svensk honung h\u00e5ller sig inte flytande utan att behandlas p\u00e5 n\u00e5got vis, men \u00e4ven d\u00e5 kommer den att kristalliseras efter hand.<\/p>\n\n\n\n<p>M\u00e4nniskan har njutit av honung i tusentals \u00e5r. Det \u00e4r antibakteriellt och har d\u00e4rf\u00f6r anv\u00e4nts f\u00f6r att lindra vid sjukdom som till exempel hosta och f\u00f6rkylning. Man har givetvis ocks\u00e5 njutit av den f\u00f6r smakens skull och som s\u00f6tningsmedel. Honung best\u00e5r till  75-80 % av olika sockerarter, ca 5 % enzymer, mineraler och vitaminer och resten \u00e4r vatten. Det \u00e4r viktigt att hantera honungen varsamt och att undvika uppv\u00e4rmning f\u00f6r att bevara alla naturliga smaker och nyttiga best\u00e5ndsdelar. Den naturliga temperaturen inne i bikupan \u00e4r 32\u00b0C \u2013 36\u00b0C och h\u00f6gre temperaturer \u00e4n s\u00e5 b\u00f6r undvikas.<\/p>\n\n\n\n<h3 class=\"gb-headline gb-headline-b5bb9939 gb-headline-text\">Riktig honung<\/h3>\n\n\n\n<p>Endast honungsbin kan producera honung och det kan endast g\u00f6ras med den nektar de samlar in. <strong>Inget annat.<\/strong> Om bina matas med socker som de lagrar i bikupan s\u00e5 blir det en honungsliknande produkt, men det \u00e4r inte honung. Om n\u00e5got tills\u00e4tts som till exempel smak\u00e4mnen eller vad som helst f\u00f6r att \"f\u00f6rb\u00e4ttra\" produkten, s\u00e5 \u00e4r det inte honung. Men, vad \u00e4r det d\u00e5?<\/p>\n\n\n\n<p>D\u00e5 \u00e4r det n\u00e5got annat. Det \u00e4r en blandprodukt d\u00e4r honung \u00e4r en del. Detta kan l\u00e5ta som semantik, men det \u00e4r viktigt f\u00f6r konsumenten att veta vad man k\u00f6per och konsumerar. Exempel p\u00e5 detta \u00e4r hallonhonung, rapshonung, lindhonung och ljunghonung bara f\u00f6r att n\u00e4mna n\u00e5gra.
